James Fletcher, Director, Operations


Born and raised in the Forest City – London, Ontario, the hospitality business is truly in James’ blood.

James started working in his family’s restaurant, London’s famous The Grosvenor Club, for 25 cents an hour as soon as he was old enough to reach the dishwasher controls.

James joined Fire on the East Side in 2012 from his position as General Manager at our sister restaurant, Hair of the Dog.  Prior to that role, James was the Assistant General Manager at Toronto’s beerbistro.

A strong family man, when not working James can be found spending time with his son, Daniel.

Reem Kamal-Al-Deen, Head Chef


Trained at Toronto’s renowned George Brown College Chef School, Reem was born in Iraq and raised in Iraq, Jordan and Toronto.

Reem found her passion for food while growing up and helping her mother in the family kitchen.

Reem joined Fire on the East Side as Head Chef in 2012.

She has held kitchen positions at our sister restaurant, Hair of the Dog, at Toronto’s Acadia Restaraunt & Bar and was Sous Chef at Toronto’s acclaimed Caren’s Wine and Cheese Bar.

Reem’s talents go beyond food.  She also draws and paints and plays the guitar, piano and flute.

Sharon Jackson, Sous Chef

A Toronto native, Sharon holds a Double Honours BA in English Literature and Psychology from Trent University and accreditation from George Brown College in Culinary Management.

Sharon’s passion for being in the kitchen stems from her love of creating great food, from learning and from teaching.

Sharon joined Fire on the East Side in 2012.

She has worked at Toronto’s The East Ender in Leslieville and Caren’s Wine and Cheese Bar.

Sharon is an avid gardener.
